“GRANO ARSO”
Grano arso means “burnt grain” — a southern Italian tradition born from necessity, where scorched wheat was turned into smoky, earthy flour.
At Della Terra, we honour that story by finishing some of our signature pastas over charcoal — not for theatre, but for flavour. It brings a subtle smokiness and a nod to the old ways, reimagined through Bali’s ingredients and our own hands.
