Grano Arso means “burnt grain” — a southern Italian tradition born from necessity, where scorched wheat left behind in the fields was milled into dark, smoky flour.

At Della Terra, we nod to that history in our own way. We finish our signature pasta over charcoal, adding a subtle smokiness that speaks to both tradition and place.

It’s not about theatre — it’s about flavour. That little edge of fire brings depth to our pasta and reminds us of where these ideas come from.
